Easy Pad Thai



8 ounces rice noodles

2 tbsp brown sugar

2 tbsp lime juice

1 tbsp soy sauce

2 tsp oil

3 green onions

1 garlic clove

2 tbsp cilantro

1/4 cup peanuts

2 eggs

1 squirt of hot sauce


1. Soak noodles in water, drain.  Cook them according to package directions.

2. In a bowl, whisk brown sugar, lime, soy sauce, and hot sauce.

3. In a skillet, add green onions and garlic to hot oil.  Cook for 30 seconds.  Add eggs and stir until the eggs are cooked.  Add the noodles to the egg mixture, cook, tossing the noodles.  Add the sauce and cook until the sauce is heated.  Put in desired dish, top with cilantro and crushed peanuts.
