Double Crunch Honey Garlic Pork Chops

(You can also make this with a chicken breast; same recipe, I would just flatten chicken or fry it in the pan longer)

4 pork chops

1/2 cup flour

1 tsp salt and pepper

1 tsp ginger

1/2 tbsp nutmeg

1/2 tsp thyme

1/2 tsp sage

1/2 tbsp paprika

1/4 tsp cayenne pepper

1 egg (or an egg white)

2 tbsp water

2 tbsp olive oil

2 cloves garlic

1/2 cup honey

1/8 cup soy sauce

1/2 tsp ground black pepper

1. Sift together the flour, salt, pepper, ginger, nutmeg, thyme, sage, paprika and cayenne pepper.

2. In another bowl, whisk together the egg and water.

3 Season the pork chops with salt and pepper.  Dip the chops into the flour mixture, then the egg mixture and once again the flour mixture.

4. Heat a skillet on the stove with 1/2 inch of oil covering the bottom.  Heat the oil at medium temperature on the stove.  Brown the chops, about 7 minutes on each side.  They should be golden brown and crispy.  Drain them on a wire rack for a few minutes before covering with the sauce.

5. While the chops are frying, in a saucepan add the garlic and oil.  Cook it over medium heat to soften the garlic.  Then add the honey, soya sauce and black pepper.  Simmer it on the stove for about 5-10 minutes, then cool before covering the pork chops.
