Easy Lasagna Skillet

1 lb. of ground beef

6 lasagna noodles

1/2 cup white onion

1/3 cup green onion

1/3 cup green pepper (or red or yellow!)

1 cup mushrooms, chopped

2 garlic cloves, minced

1 can of diced tomatoes or 2 chopped fresh tomatoes

1 cup tomato sauce

1/4 tsp black pepper

1 tsp salt

1 tsp oregano

1 tsp parsley

1/2 cup ricotta cheese

1/2 mozzarella cheese

3 tbsp parmesan cheese


1. Cook the ground beef in a skillet.  Add green pepper and onions, cook until they are softened.  Add garlic and mushrooms, cook for another 5 minutes.  Add in tomato sauce, tomatoes, parsley, oregano, salt and pepper.  Cook for another 5 minutes or until the sauce is thickened.

2. At the same time, break up the lasagna noodles into small pieces.  Cook the lasagna noodles according to package instructions.  When they are cooked, let them cool down, then add to the beef mixture.

3. Add scoops of ricotta cheese over the noodles and stir a bit, then add in parmesan cheese and mozzarella cheese.  Cook for about 2 minutes and serve.
