4 pork chops
1 tbsp olive oil
1/2 red, green or yellow pepper
1/4 cup green onions
1/2 cup mushrooms (optional)
1 can Campbell’s Tomato with Basil and Oregano soup
1/4 cup water
1 tbsp brown sugar
1 tbsp vinegar
1 tbsp Worcestershire sauce
salt and pepper
1. Brown the pork chops in a skillet. When they are close to being cooked, add the diced peppers. Heat until the pork chops are completely cooked.
2. Add the green onions and mushrooms, heat for a few more minutes.
3. Meanwhile, in a bowl add the soup, water, vinegar, brown sugar, Worcestershire, salt and black pepper. Stir in this mixture to the pork chops.
4. Simmer uncovered for about 10 minutes or until it is all cooked through. Serve over rice if needed.
