BBQ Pulled Pork



1 (3-4 pound) boneless pork loin

1/2 onion, chopped finely

1 can of diet or regular soda

1/2 bottle of BBQ sauce

seasoning salt



1. Spray the slow cooker with cooking spray.  Put the chopped onions on the bottom.  Rinse the pork loin and pat it with a paper towel, then sprinkle the loin with seasoning salt and black pepper.  Place it on top of the onions.

2. In a medium-sized bowl, combine the can of soda and 1/2 bottle of BBQ sauce, stir.  Pour the mixture on top of the pork loin in the slow cooker.

3. Cook covered on LOW for 7 hours.  When the meat is tender, take it out and shred it with 2 forks.  Place the meat back inside the slow cooker, stir it to combine with the sauce and let it cook for another 30 minutes.  Scoop it out and serve on buns.
