The Famous Black Bean Brownies



1 540 ml can black beans

3 eggs

1/4 cup cocoa powder

2/3 cup white sugar

3 tbsp vegetable oil

1 tsp baking powder

2 tsp vanilla extract

pinch of salt

1 tsp instant coffee

1/4 cup dark chocolate chips

2 tbsp melted peanut butter   **optional


1. Preheat oven to 350 degrees Fahrenheit.  Wash thoroughly and strain the can of black beans.

2. Put all ingredients except the chocolate chips into a blender.  Blend it until smooth.

3. Pour the liquid into a greased 8 x 8 inch baking pan.  Sprinkle with chocolate chips and/or melt 2 tbsp peanut butter and swirl on the top.  Bake for 30 minutes in the oven.
