Lemon Chicken



4 boneless skinless chicken breasts

1/2 cup cornstarch

3 tbsp water

2 eggs, slightly beaten

oil for frying

1 lemon

2 tbsp cornstarch

2 tbsp honey

2 tbsp brown sugar

1 tsp ginger

1  1 / 2 cups water


1. Preheat the oven to 350 degrees Farenheit.  Cut the chicken into cubes.

2. Put the eggs in a small bowl and stir, put the cornstarch in another small bowl.  Place the chicken into the egg mixture, then the cornstarch, last put it in the hot oil in the saucepan.  Fry the chicken until it is a light golden brown.

3. As the chicken is frying, in a saucepan combine the juice from the lemon, some of the rind (depending on how strong you want the lemon flavor), cornstarch, honey, brown sugar, ginger and water.  Heat at low heat until it boils and then thickens.

4. In a shallow baking dish, place the fried chicken pieces and then pour the sauce over top.  Bake in the oven for 30 minutes, stirring every 10 minutes.
