1/2 8 ounce package cream cheese
1/4 cup plain Greek yogurt
3 tbsp sugar
1 tsp vanilla
1/2 tsp lemon zest
3 whole wheat flour tortillas
1 cup sliced starwberries
oil for frying
1. In a medium bowl, soften the cream cheese. Stir in the Greek yogurt, 1 tbsp sugar, vanilla, and lemon zest. Fold in the sliced strawberries.
2. Divide the mixture among the tortillas. Fold the two sides of each tortilla toward the center and then roll the tortilla up burrito style.
3. Heat the oil in a skillet. When it is ready, place the chimichangas in the oil, browning on each side.
4. Let them dry for a minute on a paper towel and dip in a shallow dish with cinnamon and sugar spread around. Place more strawberries on top if desired.
