1 and 1/3 cup flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
2 tbsp. butter, melted
1 tsp. vanilla
2 tsp. mint extract
a few drops of green food coloring
3/4 cups chocolate chips
whipped cream for serving (optional)
1. Sift together flour, sugar, baking soda, baking powder, and salt.
2. Whisk together buttermilk, egg, butter, vanilla, mint and food coloring. Add the wet to dry ingredients. Stir in chocolate chips.
3. Heat a skillet and spray with PAM. Ladle some of the pancake mixture on the skillet. Cook one side for a few minutes and then flip. Top with more chocolate chips, whipped cream or syrup.
