Sour Cream Cinnamon Roll Pancakes





1 cup flour

3 tbsp. sugar

2 tsp. baking powder

1/2 tsp. baking soda

1 cup sour cream

1/4 cup milk

4 tbsp. melted butter

1 egg, slightly beaten



Cinnamon Sugar Filling:

4 tbsp. melted butter

1/4 cup firmly packed brown sugar

1 tbsp. cinnamon



1. Preheat a griddle or baking pan.

2. For the cinnamon sugar filling: melt the butter in a mixing bowl.  Add the brown sugar, white sugar and cinnamon.  Scoop it in a small Ziploc bag and cut off the tip.

3. For the pancake batter, add the flour, sugar, baking soda, and baking powder in a large mixing bowl and whisk together.  Then add sour cream, melted and cooled butter, egg and milk.  Stir together.

4. Add the batter to the hot griddle.  After cooking for about 2 minutes, add the cinnamon sugar by putting the end of the cut off tip into the pancake and squeeze in a swirl.
