4 chicken breasts
20 Ritz crackers
dash of pepper and salt
1/2 cup milk
1 cup cheddar cheese, grated
1 can cream of chicken soup
2 tbsp. sour cream
1 tsp. milk
1. Preheat oven to 350 degrees Fahrenheit. Slice the chicken breasts in half (so they are thinner – you can leave as is). In a food processor, grind up the crackers.
2. Put the milk, cheese and cracker crumbs in 3 separate dishes for breading. Add the salt and pepper to the cracker crumbs. To bread the chicken, dip it in the milk, then cover with cheese, and last dip in the cracker crumbs.
3. Place in a greased baking dish and sprinkle the parsley on top. Bake in the oven for 35 minutes.
4. To make the sauce, combine the cream soup, sour cream and milk. Add seasonings of your choice (salt, dill, parsley) and heat until it is warmed. Place over the chicken before eating.
