Mongolian Chicken

Ingredients:

4 boneless skinless chicken breasts

1/4 cup extra virgin olive oil

1/2 tsp. ginger

4 cloves minced garlic

1/2 cup soy sauce

1/2 cup water

3/4 cup brown sugar

2/3 cup cornstarch

2 tbsp. finely diced onions

 

1.  Preheat the oven to 350 degrees Fahrenheit.  Cut the chicken breasts into cubes.  Put them in a bowl and cover with cornstarch.  Add oil to a skillet and brown the chicken.

2. In another saucepan, heat a bit more oil and add ginger, garlic, onions, soy sauce, and water.  When it is bubbling, add brown sugar and dissolve it in the liquid.  Boil the sauce for another 2-3 minutes.  Remove from heat.

3. In a baking dish, add the browned chicken pieces then the sauce.  Bake in the oven for 25 minutes.  To thicken the sauce, take out the chicken pieces, add a bit of flour to the sauce and stir, put the chicken back in and heat another 5 minutes in the oven.  Can serve over rice.
