Cauliflower “Potato” Salad



1/2 head of cauliflower

3 hard-boiled eggs, chopped

2 stalks of celery, chopped

2 shoots of green onion or a small onion, chopped

1/2 cup peas

sprinkle of bacon pieces

1/4 cup mayonnaise

1/4 cup Plain Greek yogurt

1 tsp. yellow mustard

1 tsp. dill

salt and pepper to taste


1.Boil the cauliflower pieces in a saucepan for about 15 minutes, you don’t want to cook it, just soften it!

2. Mix all the other ingredients together and add to the cooled cauliflower.

3. Refrigerate for a few hours before serving.
