Skinny Peanut Butter Banana Chocolate Muffins

Ingredients:

1 ripe banana

1/2 cup creamy peanut butter

2 tbsp. honey

2 tsp. vanilla extract

2 tbsp. brown sugar

1 egg

1/4 tsp. salt

1/2 tsp. baking soda

1/4 tsp. baking powder

1/3 cup oat flour (oats that have been blended or processed)

1/3 cup oats

1/3 cup chocolate chips

 

1. Preheat oven to 375 degrees Fahrenheit.  Take a muffin pan and spray the muffin tin (do not use liners!).

2. In a bowl cream with a mixer the mashed banana, peanut butter, honey, vanilla, brown sugar and egg.

3. Add the salt, baking soda, baking powder, oat flour and oats.  Mix in the chocolate chips.

4. Bake in the oven for 15 minutes or until browned.
