Strawberry Pancakes with Strawberry Sauce


Ingredients (for approx. 3 pancakes):

1/3 cup whole wheat flour

2 tbsp. oats

1 tsp. baking powder

1 tbsp. sugar

1 tsp. vanilla

1/3 cup milk

1/2 cup diced strawberries


Sauce ingredients:

1/4 cup sugar

1/4 cup water

1 tbsp. cornstarch

1 lemon

3/4 cup strawberries, diced



1. For the pancakes, mix together the dry ingredients, then add the wet ingredients.  Mix until combined.  Cook on a sprayed skillet on low heat, flipping when the first side is done.

2. For the sauce, add the water, sugar and cornstarch to a saucepan.  Heat over medium heat, whisking well until thick.  Add the juice from the lemon and lemon zest.  Add the strawberries and stir gently.  Bring to a simmer and cook for 5 minutes, stirring the strawberries constantly.  Cool a bit before topping the pancakes.
