Twice Baked Potato Cauliflower



1 head of cauliflower

4 tbsp. light cream cheese

1/2 cup sour cream

1/4 cup parmesan cheese

1/4 cup green onions, diced

4 slices of bacon, cooked and diced OR  1/4 cup crumbled bacon

1/2 cup cheddar cheese


1. Preheat oven to 350 degrees Fahrenheit.  Cut off the stems and core of cauliflower and cut into small florets.  Cook in a large pot of boiling water for about 12 minutes.

2. Drain the cauliflower and mash with a potato masher or fork.  Fold in the cream cheese, sour cream, parmesan, bacon and green onion.

3. Spread evenly in a medium-sized casserole dish.  Bake in the oven for 20 minutes.  Remove from the oven and sprinkle on the cheddar cheese.  Bake for another 10 minutes.
