Seared Chicken with Avocado Lime Sauce



4 skinless, boneless chicken breast

1 teaspoon olive oil

1 diced peeled avocado

2 tablespoons cilantro

1 jalapeno pepper, seeded and finely chopped (optional)

2 tablespoons fresh lime juice (about 1 lime)

1 clove garlic

1 lime, cut into fourths

salt and pepper


1. Preheat the oven to 375 degrees Fahrenheit.  Sprinkle the chicken breasts with salt and pepper.  Place on a greased baking sheet and bake in the oven for 30 minutes.

2. While the chicken is baking, make the sauce.  Peel the avocado, remove the seed and mash it in a bowl.  Add the jalapeno, fresh lime juice, cilantro and garlic.  Mix well and let sit until the chicken is cooked.

3. When the chicken is done, squeeze lime on it then top with avocado mixture.
