Asian Lemon Chicken Tenders



premade chicken strips



For chicken:

1 cup vegetable oil

4 boneless skinless chicken breasts

salt and pepper to taste

1  1/2 cups flour

1 cup buttermilk


For lemon sauce:

1/2 cup honey

1/3 cup soy sauce

1/4 cup pineapple juice

1/4 cup brown sugar, packed

juice of 1 lemon

2 tablespoons  vinegar

2 tablespoons olive oil

1 teaspoon ground black pepper

1/2 teaspoon garlic powder


1. If using premade chicken strips, cook according to package instructions.  If making your own, cut the chicken breasts into strips.  Heat the oil in a large skillet over medium high heat.

2. Season the chicken with salt and pepper.  Dredge the chicken strips in flour, buttermilk, then flour again.  Add the chicken to the skillet and cook evenly until they are gold and crispy, about 10 minutes.

3. To make the sauce, in a saucepan combine honey, soy sauce, pineapple juice, brown sugar, lemon juice, vinegar, olive oil, pepper and garlic powder.  Bring to a boil, reduce heat and simmer until it is thick.  If need be, add a bit of flour to thicken the sauce.

4. When the chicken is done, dip the pieces into the sauce or drizzle on top.
