Tiramisu Pancakes



1 cup whole wheat flour

6 tbsp. oats

1/4 tsp. salt

2 tsp. baking powder

1 tsp. cinnamon

2 tbsp. sugar

2 tsp. instant coffee granules

2 tsp. cocoa powder

1 cup of milk (regular or almond milk)

2 tsp. vanilla

1 tbsp. oil


Frosting (optional):

1/4 cup cream cheese

1/4 cup vanilla yogurt or Greek yogurt

2 tbsp. vanilla

1 tbsp. sugar

cocoa powder for dusting


1. Mix the dry ingredients together in a bowl and stir.  Combine the wet ingredients in another bowl.  Add the wet to the dry and mix well.

2. Heat a skillet on medium heat and spray with Pam cooking spray.  Add 1/8 cup of pancake mix on the skillet in round circles and cook. Flip after 5 minutes or when browned.

3. While the pancakes are cooking, combine the frosting ingredients and stir well.  Use on the pancakes!
