1 cup quinoa
2 cups enchilada sauce (bought or my recipe is on this site)
1/2 cup canned corn kernels, drained
1/2 cup canned black beans, drained and rinsed
1/2 tsp. cumin
1/2 tsp. chili powder
1 tbsp. cilantro
salt and pepper to taste
3/4 cup shredded cheddar cheese
1 avocado, diced
1 tomato, diced
1. Cook the quinoa according to package directions.
2.Preheat the oven to 375 degrees Fahrenheit. Grease a baking dish with Pam.
3. In a bowl, combine quinoa, enchilada sauce, corn, black beans, cumin, chili powder, cilantro, salt and pepper. Stir in 1/2 cup cheddar cheese.
4. Spread quinoa mixture in the baking dish, top with remaining cheese and bake in the oven for 15 minutes. Take out of the oven and top with diced avocado and tomato.
