One Bowl Chocolate Banana Muffins



2 medium bananas

1 tsp. vanilla

1 egg

1/3 cup canola oil

1/3 cup almond milk (or regular milk)

2/3 cup sugar

1 tbsp. packed brown sugar

2 tbsp. cocoa powder

1/2 tsp. sea salt

1 tsp. baking soda

1  2/3 cups flour

1/2 cup chocolate chips


1. Preheat the oven to 375 degrees Fahrenheit.

2. In a mixing bowl, mash the bananas.  Add the vanilla, egg, milk, oil and stir well until it is all combined.  Add the sugars and mix well again.

3.  Stir in the cocoa powder and stir with a spatula, really getting the powder on the sides of the bowl.  Stir in the salt, baking soda and flour.  Mix in 1/4 cup of the chocolate chips.

4. Put muffin liners in a muffin tin and spray a bit of cooking spray in each cup.  Fill the cups about 3/4 full and sprinkle the remaining chocolate chips on top.  Bake in the oven for 8 minutes, rotate the pan, then bake another 8 minutes.
