1 cup cooked quinoa
1 tbsp. butter
2 apples, chopped
2 tsp. cinnamon
1/2 tsp. apple pie spice (or 1/4 tsp. allspice and 1/4 tsp. cloves)
3 tbsp. brown sugar
1/4 cup skim milk
1. Cook the quinoa according to package instructions. In another skillet, melt the butter and cook the apples. Stir the apples often and cook for about 10 minutes or until they are caramelized.
2. When the quinoa is finished cooking, add to it the cinnamon, apple pie spice, brown sugar and milk. Stir well until it is all combined. Add the apples to the mixture and once again stir well. Heat on the stove for a few more minutes.
