Honey Chipotle Chicken Strips



3 boneless skinless chicken breasts

1 cup flour

2 cups panko bread crumbs

1 tsp. salt and pepper

2 eggs, whisked

8 tbsp. butter, melted



1/3 cup. honey

1/2 cup sugar

2 tbsp. hot sauce

1/2 tsp. garlic powder

1/4 tsp. ketchup

1 tbsp. vinegar

1/3 cup water

2 tbsp. corn starch


1. Preheat oven to 400 degrees Fahrenheit.  Pour melted butter onto a baking sheet and brush so the entire sheet is covered.

2. Whisk together flour, salt and pepper.  In a second bowl, place bread crumbs and in a third bowl put the eggs.  Cut the chicken breasts into strips and dip chicken strips into flour, coating both sides.  Do the same in the eggs and then bread crumbs.

3. Place strips on the baking sheet and bake for 10 minutes on each side.

4. For the sauce add all ingredients but water and cornstarch.  Bring to a boil, whisking constantly.  In a small cup, stir water and corn starch together.  Add to the sauce mixture and stir until it thickens.  Reduce the heat to low.

5. When chicken strips are finished baking, dip chicken strips in sauce, tossing to coat. Serve warm with ranch dressing for dipping if you want.
