2 1/2 cups oats
1 cup all-purpose flour
1 cup whole wheat flour
1 cup brown sugar
1 tsp. baking soda
1 cup coconut oil
1 tbsp. vanilla
1 cup chocolate chips or chunks
1. Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13 inch baking dish or line with tin foil.
2. In a bowl, mix oatmeal, flours, brown sugar, baking soda, coconut oil, eggs and vanilla. Beat until it is combined and the dough holds together.
3. Put half the batter into the pan and push it down. Sprinkle half of the chocolate on top. Place the remaining dough over the chocolate and lastly sprinkle the remaining chocolate on top.
4. Bake in the oven for 20 minutes, cooling in the pan for 30 minutes before eating.
