Vietnamese Summer Roll


Ingredients:     (to make 5 rolls)

5 sheets of round rice wrappers

chicken breast (optional)

1 cup vermicelli noodles, cooked

3 carrots, sliced

2 green onions, diced

1/4 green pepper, diced

1/4 cucumber, diced

4 mushrooms, chopped

1 small romaine heart, chopped


Peanut hoisan sauce (optional)

1 tbsp. peanut butter

3 tbsp. hoisan sauce


1. Set out and dice/chop all the ingredients ahead of time before assembling.

2. Just before assembling, place the rice wrapper in a dish of hot water for 30 seconds, then move to a plate.  On top of the wrapper, add vermicelli, optional chicken and a bit of each vegetable.

3. To roll, fold in the sides of the wrapper, then one side, lastly the other.

4. To make the peanut hoisan sauce, mix the two ingredients well and spoon on top or dip the roll in.
