Secret Healthy Ingredient Cinnamon Buns



1  1/2 cups lukewarm skim milk

1/4 cup orange juice

1 tbsp. dry yeast

1/4 cup sugar

2 cups all-purpose flour

2 cups whole wheat flour

1/4 cup skim milk powder

3/4 tsp. salt

1/2 cup carrot puree

1 egg

3 tbsp. margarine

1/2 cup brown sugar

2 tbsp. cinnamon

1/4 cup cauliflower puree

3 tbsp. confectioners sugar

1 tsp. vanilla

1 tsp. orange juice


1. To make the sponge, place the milk in a bowl and microwave for 1 minute or until it is warm.  Stir in the 1/4 cup of orange juice, yeast and sugar.  Set aside for 15 minutes or until it is foamy.

2. To make the dough, combine the flour, milk powder and salt.  Mix well, then add the yeast mixture, egg and carrot puree.  Mix well, then knead for 5 minutes.  Add the softened margarine and sprinkle a bit more flour.  Cover and let rise in the bowl for an hour.

3. Preheat the oven to 350 degrees Fahrenheit.  After it has risen, move the dough to a cutting board and sprinkle a bit more flour on top.  Cut the dough in half and place it on a greased baking sheet.  Flatten the dough over the baking sheet.  Sprinkle the dough with half the brown sugar and half the cinnamon.

4. Roll the longest edge of the dough away from you to form a log.  Slice the dough into 1-inch rounds and put them swirl side down on the baking sheet.  Repeat with the other half of the dough.

5. Bake in the oven for 15 minutes.  While they are cooking, make the glaze.  Whisk together the cauliflower puree, confectioners sugar, vanilla and 1 tsp. orange juice.

6. Remove the buns from the oven.  Let cool before drizzling with the glaze.
