Salt and Vinegar Broiled Potatoes



4 medium potatoes, sliced to 1/8 inch thickness

1 cup vinegar

1 cup water

salt and pepper

1. In a pot, combine the water and vinegar.  Bring it to a boil and add the sliced potatoes.  Continue boiling until the potatoes are soft, approximately 25 minutes.  Then let the potatoes cool in the liquid for 30 minutes.  Then pat them dry with a paper towel.

2. Preheat the broiler on the oven, put the potatoes on a wire rack over a cookie sheet.  Sprinkle the potatoes with olive oil, salt and pepper.  Put them in the oven for 7 minutes, then turn the potatoes around and broil for another 5 minutes on the other side.
