Skinny Cauliflower Tots



2 cups of cauliflower

1 egg

1 egg white

1/2 cup onion, diced

1 tsp. garlic

2 tbsp. parsley

1/2 cup cheddar cheese, grated

1/2 cup Panko breadcrumbs

salt and pepper to taste

1. Preheat oven to 400 degrees Fahrenheit.  Break the cauliflower into florets and steam in a steamer on the stove top for about 6 minutes.  Chop the cooked cauliflower into little pieces.

2. Place the cauliflower in a bowl, add the rest of the ingredients and mix well.  Using a tablespoon, spoon some of the mixture into your hands and form into a hard egg shape.

3. Place the tots on a greased cookie sheet and bake in the oven for 15 minutes, turn them to the other side, then bake for another 10 minutes.  Dip in ketchup or a sauce of you choice.
