Garlic Mushroom Quinoa



1 cup quinoa

1 tbsp. olive oil

1 1/2 cup sliced mushrooms

5 cloves garlic, minced

t tsp. thyme

1 tsp. dill

2 tbsp. parmesan cheese

salt and pepper to taste

1. Cook quinoa according to package instructions.  As the quinoa is cooking, heat olive oil in a skillet.  Add the garlic, mushrooms, thyme and dill.  Cook for about 5 minutes, stirring often.

2. Add salt and pepper to taste.  Add the quinoa to the mushrooms and stir.  Sprinkle parmesan on top.
