1 cup quinoa, rinsed well
1 1/2 cups reduced-sodium chicken broth
2 cups broccoli, chopped
1 cup shredded cheddar cheese
salt and pepper to taste
1. Bring the quinoa and broth to a boil over medium heat, reduce the heat and simmer for 8 minutes. Add the broccoli and simmer for another 7 minutes.
2. Mix in the cheese, let it melt and season with salt and pepper.
