1 cup cooked quinoa, slightly warm (not hot)
1 / 2 cup peanut butter
2 tbsp. pure maple syrup
1 tsp. vanilla extract
3 tbsp. mini chocolate chips
1. Line a baking sheet with parchment paper. In a bowl add peanut butter, maple syrup and vanilla. Stir well.
2. Add in the quinoa and mix that well. Scoop spoonfuls into balls and put on the parchment paper. Place into the freezer for at least 30 minutes before eating.
