Tuna Quinoa Cakes



1/4 cup mashed sweet potato

1 can of flaked light tuna

1/3 cup cooked quinoa

2 tbsp. green onion, chopped

2 cloves garlic, minced

1 tbsp. lemon juice

1 egg

3 tbsp. plain yogurt

1/2 tbsp mustard

1/4 tsp. cayenne pepper

1/2 tsp paprika

1/4 cup breadcrumbs


1. Preheat oven to 400 degrees Fahrenheit.  In a bowl, combine the tuna and sweet potato, mix well.  Add the rest of the ingredients and stir until it is all combined.

2. Form the mixture into cakes and place on a greased cookie sheet.  Bake in oven for 20 minutes, flipping halfway.
