1 cup oats
3/4 cup whole wheat flour
1 and 1/2 tsp. baking powder
2 tsp. ground cinnamon
2 tbsp. coconut oil or butter, melted
2 tsp. vanilla
1/2 cup agave nectar (or maple syrup)
1 cup finely diced apple
1. Preheat oven to 325 degrees Fahrenheit. In a large bowl, sift together oats, flour, baking powder and cinnamon.
2. In another bowl, add the coconut oil or butter, egg, and vanilla. Stir well before adding the agave nectar. Mix the wet with dry ingredients. Add the diced apple and stir well.
3. Cool in the fridge for 30 minutes. Drop the cookie dough on a baking sheet, flatten slightly. Bake in the oven for 15 minutes.
