Thai Ginger Peanut Slaw

Ingredients:

1 cup broccoli slaw

1/4 cup cilantro leaves

1/2 cup peanuts

juice of a lime

1 tbsp. fish sauce

2 tsp. peanut oil (or olive oil)

2 tsp. rice wine vinegar

1/2 tsp. ginger

1. Place the broccoli slaw into a bowl, sprinkle the cilantro leaves on top.

2. In a small dish, mix the lime, fish sauce, peanut oil, rice wine vinegar and ginger. Place the dressing on the slaw, top with peanuts.
