Easy Homemade Coconut Shrimp

Ingredients:

1/3 cup flour

1/2 tsp. salt

1/2 tsp. pepper

2 eggs, beaten

3/4 cup Panko bread crumbs

1 cup shredded coconut

25 pieces of shrimp

coconut oil

1. Get out 3 bowls: in one put flour, salt and pepper.  In another put the beaten eggs and in the third mix the coconut and panko crumbs.

2. Dip both sides of the shrimp in the flour, then eggs, and then the coconut mixture.  Press down on them to make sure the coating sticks.

3. Add oil to the bottom of a skillet and cook the shrimp for about 4-5 minutes on each side.  After cooking, place on a paper towel and soak up some of the oil.  Serve with a ranch or sweet chili heat sauce.
