Italian Potatoes



3 large potatoes

3 tbsp. olive oil

2 tbsp. Italian seasoning

salt and pepper to taste

2 tbsp. parmesan cheese

1. Preheat oven to 425 degrees Fahrenheit.  Slice the potatoes into very thin slices (1/4 inch) and place in a bowl or ziplock bag. Toss the potatoes in olive oil.

2. Sprinkle on the Italian seasoning, salt and pepper. Place in a single layer on a baking sheet lined with foil.

3. Bake for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
