Shrimp Fried Rice

Ingredients:

1 cup cooked brown rice

10 jumbo shrimp

1/2 cup onion, diced

1/2 cup sliced carrots

1/2 cup pepper, diced

1/4 cup peas

2 tsp. olive oil

2 tbsp. all seasoning (or seasonings of choice – onion powder, garlic powder, paprika, dill, parsley…)

1. Heat the oil in a skillet, add the white onion and cook for a few minutes.  Add the pepper and cook for a few more minutes.   Mix in the remaining vegetables and the shrimp.

2. Let heat for 5 minutes before adding the rice and the spices.  Cook for another 5 minutes or until the shrimp is heated through.
