Lemon Zucchini Muffins



1 cup buttermilk

1/3 cup vegetable oil

1/3 cup sugar

1 egg

zest of one lemon

2 cup grated zucchini

1 cup flour

1 cup whole wheat flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 cup powdered sugar

1 tbsp. lemon juice

1 tbsp. cold water
1. Preheat oven to 400 degrees Fahrenheit.  In a large bowl, stir together buttermilk, oil, sugar, and egg until it is smooth.  Stir in lemon zest and zucchini.  Lastly, add the flours, baking powder, baking soda and salt.
2. Scoop the muffin dough into muffin tins sprayed with cooking spray.  Bake in the oven for 18 to 20 minutes.
3. After the muffins have cooled, make the lemon glaze.  In a small bowl, whisk together powdered sugar, lemon juice and water until it is smooth.  Dunk the top of the muffins into the glaze and place on a wire rack to set.  Glaze will harden and you can eat the muffins in a few minutes.
