4 chicken breasts
salt and pepper
1 cup panko bread crumbs
1/4 cup parmesan cheese
4 tbsp. olive oil
1 1/2 cups spaghetti sauce of your choice
2 cups chopped baby spinach
1 cup grated cheese
1.Sprinkle the salt and pepper on the chicken breasts. Place the parmesan cheese and panko bread crumbs on a plate, mix well. Coat both sides of the chicken breasts with the bread crumb mixture.
2. In a skillet, place the oil and garlic, heat for a few minutes. Place the chicken breasts in the pan and cook on both sides on low heat until they are browned and cooked through.
3. Take the chicken out of the skillet and add a 1/2 cup of tomato sauce and spinach to the skillet, stir. Heat for a few minutes, then put the chicken breasts back in. Top the chicken with more sauce, spinach and cheese. Cover with a lid and let heat while it is still on a low temperature.
