Chicken Marsala

chicken marsala


2 tbsp. butter

2 cups sliced mushrooms

1  1/2 tbsp. flour

1/2 cup of white wine or chicken broth

1/2 cup heavy cream

2 cups water

2 tbsp. parsley

salt and pepper

1 cup long grain rice

2 cups chopped chicken, cooked

2 tbsp. parmesan cheese


1.Preheat the oven to 350 degrees Fahrenheit.  In a large pan, heat the butter until melted, then add the slice mushrooms.  After about 5 minutes, sprinkle the flour on top and stir for a minute.

2. Stir in the chicken broth and cream; simmer while stirring occasionally for about 5 minutes or until it is thickened.  Stir in 2 cups of water, parsley, salt and pepper.

3. In a casserole dish, spread the rice evenly on the bottom.  Top with the cooked chicken and then the mushroom gravy.  Cover with foil and bake in the oven for 35 minutes.  Remove foil, sprinkle with parmesan and bake for another 5 minutes.
