Ingredients:
2 boneless, skinless chicken breasts, grilled and shredded
2 cups cooked rice
2 cups cooked quinoa
1 can corn or 3/4 cup frozen corn
1 can black beans
1 tomato, diced
3 green onion stems, chopped
1 can green chilis
1 cup plain Greek yogurt or sour cream
1.5 cups salsa
1 cup grated cheddar cheese
1.Preheat oven to 350 degrees Fahrenheit. In a large bowl, combine all the ingredients and place in a large, greased backing dish. Bake for 20 minutes, top with shredded cheese and bake for another 5 minutes.
