Apple Fritter Muffins



1/2 cup butter, softened

2/3 cup sugar

2 eggs

1  1/2 tsp. vanilla

1  1/2 cups flour

1  3/4 tsp. baking powder

1/2 cup milk

1/4 cup brown sugar

1 /2 tsp. cinnamon

2 large apples, peeled and chopped

2 tbsp. sugar

1 tsp. cinnamon

1/2 cup powdered sugar

2 tbsp. milk



1.Preheat oven to 350 degrees Fahrenheit.  In a bowl, combine softened butter and the 2/3 cups of sugar, mix with a hand mixer until creamy.  Add the eggs and vanilla, mix well.  Then add the flour and baking powder, stir by hand with a spoon.  Add the milk and using a fork, stir until it is incorporated.

2.Chop up the apples, place in a bowl and sprinkle 2 tbsp. sugar and 1 tsp. cinnamon in.  Toss until it is evenly coated.

3.In a small bowl, combine the 1/4 cup brown sugar and 1/2 tsp. cinnamon.  Mix well.

4.Place muffin liners in a muffin tin and spray with cooking spray.  Place a heaping tablespoon of the batter in the muffin liner, top with a heaping tablespoon of apples, then sprinkle some brown sugar mixture on top.  Then place another tablespoon of batter on top, then another of apples, lastly sprinkle some more brown sugar mixture.

5.Bake in the oven for 25 minutes.  In a small bowl, combine the powdered sugar and 2 tbsp. milk.  Stir well and drizzle on top of the muffins.
