Cheesy Chicken Bacon Broccoli and Rice



2 large boneless, skinless chicken breasts

1/2 cup bacon diced

2 tbsp. olive oil

1 cup diced onion

4 cups broccoli, chopped

4 cloves garlic, minced

1 can diced tomatoes

3 green onions, diced

1/2 small package of mushrooms (optional)

1 cups rice, uncooked



2 tbsp. butter

2 tbsp. flour

1 cup chicken broth

3/4 cup cheddar cheese, grated

1/2 tsp. salt and pepper


1.Cook the rice according to package instructions.

2.Put the olive oil at the bottom of a skillet and add the diced chicken.  When it is cooked, add the broccoli and onions.  Cook at medium heat for about 10 minutes, or until the broccoli is tender and the onions are browned.

3. To the pan, add the garlic, tomatoes, mushrooms, green onions, chicken and bacon, cook for another 10 minutes.

4. In another pan for the sauce, add the 2 tbsp. of butter and melt.  When it is melted, stir in the flour and whisk until it is combined.  Add the chicken broth and bring to a boil.  When it is hot and bubbly, mix in the cheese, salt and pepper.  Add the rice to the chicken mixture, then the cheese sauce.  Stir well until it is combined.
