Buffalo Chicken Casserole



1/2 cup uncooked rice

1 cup water

1 tbsp. olive oil

2 chicken breasts

2 stalks of celery, diced

1 can diced tomatoes

1/2 cup buffalo wing sauce

1/2 cup blue cheese or ranch salad dressing

1 cup mozzarella cheese

1.Cook the rice according to package instructions and heat the oven to 350 degrees Fahrenheit.
2. In a skillet, add the diced chicken and cook until it is not pink.  When it is finished cooking, add the celery, tomatoes and wing sauce.
3. In a baking dish, spray with cooking spray and add the rice to the bottom.  Top with the chicken mixture – do not stir.  Drizzle the salad dressing on top, then top with cheese.  Bake in the oven for 25 minutes.
