One Pot Spinach and Feta Mac and Cheese



2 tbsp. olive oil

1 onion, diced

2 garlic cloves, minced

2 tomatoes, diced

2 cups spinach, chopped

1/2 cup feta cheese

1/2 cup shredded cheddar cheese or mozzarella

2 cups pasta

1 cup low sodium vegetable broth

1 cup skim milk

1/2 tsp. Italian seasoning

salt and pepper to taste



1.Heat oil in the pan and add garlic and onions, cook until the onions are translucent.

2.Add the tomatoes, spinach, macaroni, broth, milk and seasonings.  Bring to a boil while stirring, then reduce to medium, cover and cook for 15 minutes.

3.  Add the cheeses and heat for another 5 minutes.
