Healthy Flourless Chip Cookies



1  1/2 cups oats blended in a blender

1/2 tsp. baking soda

1 tsp. cinnamon

pinch of salt

2 tsp. vanilla

1 large egg

4 tbsp. brown sugar lightly packed

1/2 cup coconut oil, melted

1/2 cup chocolate or butterscotch chips



1.Put the ground oats, baking soda, cinnamon and salt in a bowl.  In a separate bowl, mix the egg, vanilla, brown sugar and coconut oil.

2. Mix in the chocolate chips and stir well.  Place in the refrigerator for 1 hour.  Then scoop out in small, firm balls and bake for 10 minutes in a 350 degree Fahrenheit oven.  Cool before eating.
