Egg Roll in a Bowl

Ingredients:

1 lb. ground beef or turkey

4 cups shredded coleslaw mix

1 medium onion, diced

3 cloves garlic, minced

3 tbsp soy sauce

2 tsp rice wine vinegar

salt and pepper to taste

 

1.Cook the ground meat until it is finished.  Remove from the pan and leave the leftover fat.  Cook the onions and garlic in the fat.

2. Add the coleslaw mix and cook for another 10-15 minutes, depending on how crunchy you want the cabbage.

3. Mix back in the ground meat, then add the soy sauce, rice wine vinegar, salt and pepper.

Freezer Meal Beef Fajitas

Ingredients:

1 package of steak slices

2 bell peppers, sliced

1 onion, diced

1.5 cups beef broth

2 tbsp cornstarch

1/3 cup brown sugar

1/4 cup soy sauce

 

 

1.Make sure the steak, peppers and onions are sliced/diced.  Put all of the ingredients in a plastic bag and mix well.  Flatten and place in the freezer.

2. When you are ready to cook, place in a crock pot for 3-4 hours and serve in a tortilla.

Ravioli Lasagna

Ingredients:

1 lb. of ground beef or turkey

1 onion, diced

1 bell pepper, diced

1 can tomatoes

1 cup mushrooms, diced

3 cloves garlic, minced

salt and pepper to your liking

1 package of premade ravioli

2 cups mozzarella cheese, shredded

 

 

1.In a large saucepan, cook the ground beef until it is done.  Add the bell peppers, onions, mushrooms and heat until they are cooked.  Add the canned tomatoes and garlic.

2. In a baking dish or foil pan, layer meat sauce, ravioli and cheese.  Then make another layer the same way.

3. If making a freezer meal, freeze and then follow this step.  If baking right away, cook in a 350 degree Fahrenheit oven for 30 minutes.

 

Slow Cooker Beef Fajitas

Ingredients:

2 pounds sliced beef

1-2 bell peppers, sliced

1 onion, sliced

1 cup salsa

3 tbsp. spice mix

 

Spice mix:

1 tbsp. chili powder

1 tsp. cumin

1 tsp. salt and pepper

1/2 tsp. oregano, paprika, garlic powder, onion powder

 

 

1.Place ingredients in a slow cooker and cook on low for 7-8 hours or high for 3-4 hours.  Serve on a tortilla.

Orange Crispy Beef

Ingredients:

1  1/2 pounds stir-fry steak, sliced thinly

3 tbsp. soy sauce

6 tbsp. cornstarch

1 medium navel orange, peels grated and juiced

3 tbsp. brown sugar

1 tbsp. rice vinegar

1  1/2 tsp sesame oil

3 cloves garlic, minced

1 tsp. ginger

1/2 tsp. red pepper flakes

2 scallions, chopped

oil for frying

 

1.Place the beef in half the soy sauce and toss in cornstarch.  Place on a wire rack over a cookie sheet and place in the freezer for 45 minutes to dry out the moisture in the meat.

2. In a bowl, place the orange zest, orange juice, remaining soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger and red pepper flakes.  Stir well.

3. When the beef is ready, place oil in a deep skillet and heat.  Place the beef strips in the oil and cook for about 5 minutes on each side.  Take out and sit on a paper towel.

3.  In a new saucepan, place the soy sauce mixture and beef, heating to a boil.  Stirring continuously, mix well for about 3 minutes.  Top with scallions if you choose.

 

Slow Cooker Mongolian Beef

Ingredients:

1  1/2 pounds steak meat

1/4 cups cornstarch

2 tbsp. olive oil

3 garlic cloves, minced

3/4 cup soy sauce

3/4 cup water

3/4 cup brown sugar

1 cup grated carrots

green onions for garnish

 

 

1.Cut steak into strips, put in a bag and coat with the cornstarch.

2. Add the rest of the ingredients to the slow cooker, put in the steak strips and stir, coating evenly.

3. Cook on high for 3 hours or low for 6 hours.  Serve over rice.

Spinach Feta Meatballs

Ingredients:

1 lb. of ground turkey or beef

salt and pepper

2 cloves garlic, minced

1 tbsp. minced onion flakes

1 egg

3/4 cup of oats or bread crumbs

1 cup of spinach, chopped

3/4 cup of feta cheese, crumbled

 

 

1.Mix all of the ingredients together in a bowl.

2. To cook meatballs, I like to form into the meatball shape, fry a bit in a skillet until they are browned, then put them on a baking sheet in the oven at 350 degrees Fahrenheit for 25 minutes.
