Frozen Peanut Butter Banana Cups

Ingredients:

1 ripe banana

3/4 cup softened peanut butter

1/4 cup honey

3/4 tsp vanilla

2  1/4 tsp coconut oil

1/4 tsp sea salt

 

 

1.Cut the banana into 1/4 inch thick slices.  Mix all remaining ingredients together.

2. On the bottom of a muffin tin, place a spoonful of the peanut butter mixture, enough to over the bottom.  Place a sliced banana on top and then cover with more peanut butter mixture.  Put in the freezer for a few hours before eating.

No Bake Monster Cookie Bites

Ingredients:

1  1/4 cups oats

1/2 cup smooth peanut butter, slightly softened

1/4 cup honey

1/3 cup M & M’s or Smarties

1/3 cup chocolate chips

 

1.Mix all of the ingredients together and form into balls.  Place on a cookie sheet and cool in the fridge for 30 minutes before eating.

 

Healthy Reese Peanut Butter Cup

Ingredients (for 1):

1 tsp. melted coconut oil

1 tsp cocoa powder

1/2 tsp honey

1/2 tsp peanut butter

 

1.Melt the coconut oil in the microwave and stir in the honey and cocoa powder.  Place in a muffin tin or liner.  Melt the peanut butter and spoon on top.

2. Freeze for at least 15 minutes.

Cranberry Almond Energy Bites

Ingredients:

1 cup oats

1/3 cup almonds, chopped

1/3 cup shredded coconut

1 tbsp. flax seed

1/2 cup nut butter, softened

1/4 cup honey

1 tbsp. chia seeds

1/4 cup dried cranberries

 

 

1.Bake oats, almonds and coconut in a 350 degree Fahrenheit oven for 10 minutes.  Allow the mixture to cool.

2. Mix all of the ingredients together and form into balls.  Freeze to harden, then eat.

Creamy Peanut Butter Yogurt Bark

Ingredients:

1 cup of  Greek yogurt

1 tbsp. of agave nectar or honey

2 tbsp. peanut butter, softened

2 tbsp. chocolate chips

 

1.Put parchment paper on a baking sheet.

2.In a bowl, combine the Geek yogurt, sweetener and peanut butter; stir well.  Spread on the baking sheet and top with chocolate chips.  Freeze for at least an hour before breaking apart and eating.

Cinnamon Sugar Popcorn

Ingredients:

6 cups of popped popcorn

3 tbsp. melted butter

1/2 tsp. vanilla

4 tbsp. white sugar

1 tbsp. cinnamon

 

1.Melt the butter in a saucepan (can make it browned butter).  Add the vanilla and stir.

2.Pour the butter on the popcorn, then sprinkle the cinnamon sugar mixture on top.

Caramel Apple Salad

Ingredients:

(2 servings)

1 cup of Cool Whip
1/4 box sugar free instant Butter Scotch Pudding mix
1/2 oz. can pineapple tidbits in juice
2 large apples of your choice

 

1.Mix the pineapple tidbits and some of the juice from the can with the butterscotch pudding.  Dice the apples and add to the bowl, lastly stir in the Cool Whip.  Chill for at least an hour before serving.
