Chicken Detox Soup

Ingredients:

1  1/2 pound chicken breasts, shredded

8 cups chicken broth

1 onion, diced

3 cups broccoli florets

2  1/2 cup shredded carrots

1  1/2 cups frozen peas

2 cups chopped celery

3-4 cloves garlic, minced

1/4 cup chopped parsley

3 tbsp. ginger

2 tbsp. olive oil

1/2 tsp. tumeric

1 tbsp. apple cider vinegar

1/4 tsp. crushed red pepper (optional)

salt and pepper to taste

 

1.Put the saucepan on medium heat with the olive oil, onions, peppers, garlic and ginger inside.  Saute for 5-6 minutes to soften.

2. Add the chicken broth, chicken breasts, apple cider vinegar, crushed red pepper, tumeric, salt and pepper.

3. Bring to a boil, reduce heat and cook for 20 minutes or until the chicken is cooked.  Add the broccoli, peas and parsley.  Once the broccoli is tender it is finished cooking.

Smoky Corn Chowder with Bacon

Ingredients:

2 slices of bacon, diced

1/2 pound of shrimp

1/2 an onion, diced

2 cloves garlic, minced

1 tbsp. smoked paprika

1 pinch crushed red pepper

1 can of corn

2 cup chicken broth

1/2 cup half and half or cream

pinch of salt and pepper

basil for garnish

 

1.Heat the bacon and cook in some oil.  When it is finished cooking, set aside.

2. In the same pot, add the onions in some oil and cook until translucent.  Add the garlic, paprika, crushed red pepper, salt and pepper.  Stir in the corn and shrimp, heating for another 5 minutes.

3. Add the bacon, chicken broth and half and half.  Simmer for another 15 minutes.  You can use an immersion blender to pulse it creamy, if desired.

Lemon Chicken Orzo Soup

Ingredients:

3 tbsp. olive oil

1 cup onions, diced

1/2 celery, diced

1/2 cup carrots, diced

3 cloves garlic, minced

1 tbsp. thyme

1 tbsp. basil

salt and pepper to taste

6 cup chicken broth

1  1/2 cup orzo, cooked

1.5 lemons, juiced

rind of one lemon

2 cups chicken breast, cooked and diced or shredded

1/2 cup milk or heavy cream

 

1.In a large pan, add the olive oil and the onions.  Cook the onions for about 5 minutes before adding the celery and carrots.  Cook for about 10 minutes, stirring often.

2. Add the garlic, spices and chicken broth.  Bring to a boil and then simmer for about 10 minutes.  Add the orzo, lemon juice, lemon zest and chicken.  Cook for another 5 minutes.

3. Add the milk or heavy cream, then cook for 5 more minutes.
