Spinach Feta Meatballs



1 lb. of ground turkey or beef

salt and pepper

2 cloves garlic, minced

1 tbsp. minced onion flakes

1 egg

3/4 cup of oats or bread crumbs

1 cup of spinach, chopped

3/4 cup of feta cheese, crumbled



1.Mix all of the ingredients together in a bowl.

2. To cook meatballs, I like to form into the meatball shape, fry a bit in a skillet until they are browned, then put them on a baking sheet in the oven at 350 degrees Fahrenheit for 25 minutes.



Slow Cooker Salisbury Steak


Beef Patty Ingredients:

1 pound ground beef or turkey

1 egg yolk

1/4 cup diced onion

1/3 cup panko crumbs

3 tbsp. milk

2 cloves garlic, minced

salt and pepper to taste



6 o. mushrooms, sliced

1 onion, diced

2 cups low sodium beef broth

2 packages dry brown gravy mix

2 tbsp. ketchup

1 tsp. mustard

2 tbsp. parsley

2 tbsp. cornstarch

4 tbsp. water



1.Combine beef patty ingredients and form into 6 patties.  Brown the patties in a pan with olive oil.  In a bowl, combine all the sauce ingredients except the water and cornstarch.

2.In the slow cooker, place the onions and mushrooms at the bottom.  Place the browned meat patties on top.  Pour the liquid on top of the meat patties.

3. Cook on low 5 hours.   Take the patties out of the slow cooker then mix the water and cornstarch in a small cup.  Add the cornstarch mixture to the liquid left in the slow cooker and heat for a few minutes.  Add the meat patties back to the liquid and cook for another 20 minutes.  Serve on potatoes or pasta.

Cheeseburger Gnocci



1 lb. of ground turkey or beef

1  16 oz. package of potato gnocci

1 tbsp. butter

1 tsp. salt, pepper, smoked paprika, cumin, mustard powder

1 onion, diced

4 cloves garlic, diced

1 can diced tomatoes

1 cup beef broth

1/4 cup milk

1 small package mushrooms, sliced

1/3 cup green onions, diced

1/2 cup shredded cheddar cheese


1.Brown the gnocci in the butter in a large skillet for about 3 minutes on each side, take out and set aside.

2. Add the onion and ground meat to the pan and cook completely.  Add the spices, garlic, mushrooms and green onion.  Cook for 5 minutes.

3.  Add the tomatoes, gnocci, broth and milk.  Bring to a boil, then reduce heat, cover and let sit for 5 more minutes.  Top with cheese and serve once cheese is melted.



Turkey Spaghetti Bake



12 ounces of spaghetti (mine is black bean spaghetti, so it is black 🙂 )

1 lb. ground turkey

1 onion, diced

1 green pepper, diced

1 small package of mushroom, sliced

2 tomatoes, diced

3 green onions, chopped

1 can olives (optional)

1 tsp. each oregano, dill, onion powder

2 cloves garlic, minced

1 can cream of mushroom soup

1/4 cup water

1 cup shredded cheddar cheese


1.Preheat the oven to 350 degrees Fahrenheit.  In a skillet, heat the ground turkey.  When it is starting to get some colour, add the onions and green pepper.  When the turkey is cooked and the onions are a bit translucent, add the mushrooms, tomato and green onion.  Add the spices and garlic.

2. As that is cooking, cook spaghetti according to package instructions.

3. In a large bowl or the skillet, add the drained spaghetti to the ground turkey mixture.  In a small bowl, mix together the mushroom soup and water.  Add that to the spaghetti and meat.  Stir well and place it all in a casserole dish.  Top with the cheese and bake in the oven for 20 minutes.

Turkey Sweet Potato Skillet

2 tbsp. extra-virgin olive oil

1 pound extra-lean ground turkey

2 cloves garlic, minced

½ cup onions, diced

½ cup pepper, diced

1 ½ cup sweet potato, diced

1/2 cup mushrooms, sliced

1 tomato, diced

1/2 cup chicken broth

Salt and pepper

A pinch of chili pepper

½ cup shredded mozzarella cheese

spices of your choosing


1.Place the oil and ground turkey in the skillet and brown.  Add the onion and garlic, cook for 5 more  minutes.

2. Add the rest of the ingredients other than the cheese to the skillet and cover.  Cook until the sweet potatoes are soft, or about 15 minutes.

3. Top with cheese right before serving.






Healthy Tater Tot Casserole

You can use store bought tater tots or make your own!

For the tater tots:

2 cups of cauliflower

1 egg

1 egg white

1/2 cup onion, diced

1 tsp. garlic

2 tbsp. parsley

1/2 cup cheddar cheese, grated

1/2 cup Panko breadcrumbs

salt and pepper to taste


For the meat base:

1 pound ground turkey or beef

1 onion, diced

1 cup of mushrooms

2 cloves of garlic

1 can mushroom soup

salt and pepper

shredded cheese (optional)



1.To make the tater tots: Preheat oven to 400 degrees Fahrenheit.  Break the cauliflower into florets and steam in a steamer on the stove top for about 6 minutes.  Chop the cooked cauliflower into little pieces.

2. Place the cauliflower in a bowl, add the rest of the ingredients and mix well.  Using a tablespoon, spoon some of the mixture into your hands and form into a hard egg shape.

3. Place the tots on a greased cookie sheet and bake in the oven for 15 minutes.

4. At the same time, cook the ground turkey or beef and onions in a skillet.  When it is browned add the garlic, salt, pepper and mushrooms and cook a bit more.  Add the mushroom soup and pour the mixture in a baking dish.

5.Place the tater tots on top of the meat mixture and top with shredded cheese.  Bake in a 350 degree Fahrenheit oven for another 20 minutes.


Turkey Stuffed Mushrooms



20 large mushrooms

1 lb. ground turkey

1 tbsp. olive oil

2 cloves garlic, minced

1 egg, slightly beaten

2 shallots, minced

1/4 cup Panko crumbs

1 tsp. Worcestershire sauce

1 tsp. sage

1 tsp. rosemary

1/2 tsp. salt

1/2 tsp. pepper

1/2 cup cheese

1.Preheat the oven to 375 degrees Fahrenheit.  In a pan, sauté the shallots and garlic in the olive oil for about 7 minutes.  Set aside.

2. In a large mixing bowl, combine the ground turkey, egg, bread crumbs, Worcestershire sauce, sage, salt, pepper and the cooled shallots.  Using your hands, knead the mixture until it is well combined.

3. Remove the stems from the mushrooms and stuff with small balls of the turkey mixture.  Arrange the mushrooms on a baking sheet and cook in the oven for 25 minutes.  Take out and sprinkle a bit of cheese on each mushroom.  Bake for another 5 minutes or until the cheese browned.
